Why Does Food Safety Continue to Be Such a Challenge: Change, Change, Change!
Our food supply is the safest ever but food safety remains a significant public health issue. Each year in Canada it is estimated that between 11 to 13 million individuals become ill from consumption of food and water. Over the past twenty years we have seen significant changes in our knowledge about foodborne disease and how it impacts consumers. Changes in population demographics, in microorganisms and changes in the food supply have all had an impact on the incidence of foodborne disease. This presentation will provide an overview of the challenges that we face with the microorganisms in our food supply.
